Torre Alfina is in the heart of Italy’s sheep country. Several neighbors tend and milk sheep and produce artisanal Italian cheeses (ricotta, pecorino, caciotta). If you'd like to try your hand at making fresh ricotta, we can arrange for a cooking class and witness the cheese-making process – available November through April.
Or if you'd just rather sample the goods, we can also arrange for a local cheese tasting – available all year round.
Either way, we recommend taking some fresh ricotta back to the villa to prepare a "shepherd's breakfast" – fresh-made ricotta with a shot of espresso and spoonful of sugar – enjoyed under the pergola with birdsong and church bells in the distance. And for lunch, there isn't anything tastier than a large ball of mozzarella di bufala, made from the milk of Mediterranean buffalos.
